What started as a sourdough obsession in a home kitchen became something more: a daily practice of precision and patience, of coaxing complex flavors from the simplest of ingredients. Flour. Water. Salt. Time.

The Culture

Our mother starter — maintained daily — is the living heart of every loaf. Wild yeasts and bacteria cultivated over years of dedicated care.

The Ferment

A long, cold fermentation develops flavor compounds that fast-rising doughs never achieve. Most loaves spend 18–24 hours in the cold.

The Fire

Baked in cast iron or on a stone deck at high heat, the crust forms in the first critical minutes. Every score is deliberate.

The Ingredients

We source flour from regional mills when possible, preferring stone-ground and whole-grain options that carry the flavor of the land. No additives, no conditioners — just flour, water, salt, and the culture we've tended.

Butter is always cultured. Chocolate is always dark. Herbs come from the garden when the season allows.
